Why it matters

A vegan plate can be the most nourishing on the table or the emptiest, and the difference is knowing where the iron, calcium and protein are coming from. Plant iron is absorbed less than the iron in meat, and a squeeze of lemon changes that. No plant food supplies B12 — that one comes from a supplement or a fortified food, and nunu will say so rather than pretend. Eat this way well and the evidence on fibre, blood pressure and weight over years is on your side.
