Sodium raises blood pressure and potassium pushes the other way. Most of a recipe’s sodium is a single ingredient, and it is nearly always the teaspoon of salt in the method rather than anything exotic, which means it is the easiest number in nutrition to change. Doing that at every meal, for years, is a measurable difference in blood pressure that costs nothing and takes no willpower once you can see it.
